Bodegas Félix Lorenzo Cachazo was founded in 1946, and gave rise to a family dedicated to making quality wines across generations. Félix Lorenzo Cachazo started his journey in the world of wine working in one of the old underground wine cellars in the village of Pozaldez, making Amontillado, before delving into the wide world of Rueda wines. Félix was one of the early adopters of changing the winemaking style, a change that resulted in the reinvigoration of the Verdejo grape, among others. In 1980, Félix became one of the eight founders of the newly created Rueda D.O. Verdejo for Gran Cardiel comes from vineyards all over Rueda, including Pozaldez, La Seca, and Serrada with clay soils and stony/sandy soils. A continental climate, with hot, dry summers and extremely cold winters, with rainy spring and fall, encourage ripening before an early September harvest. Grapes are destemmed and crushed with light pressing. Cool temperature fermentation lasts three to four weeks. Following fermentation, the wine is aged on its fine lees before light filtration and bottling. Tasting Notes: Straw yellow with greenish lacing. Intense herbal aromas, with notes of fennel and balsamic. Hints of stone fruits, like peach and quince. Fruity and fresh on the palate, with bright acid and a long finish. Food Pairing: Try pairing this wine with fresh, springy salads. It also shines with light pastas and risottos, and just about anything with olives. Delicious with a Puttanesca!
